My dinner staple: Roasted Potatoes...insert all the veg.
Russet potatoes, washed and chopped then thrown into the oven at 400 degrees for twenty minutes. Seasoned generously with salt and onion powder. Flipping them half way through.
I had extra spinach and tomatoes so that's what was chopped up tonight.
Slowly cook them on a low heat when you have about 10 minuets left on the potatoes.
A few minuets before the timer for the potatoes go in, I added some cashew and nooch as a sauce.
I already had this mixed up but it's just a cup and a half of cashews, a cup of water and 1/3 of a cup of nutritional yeast.
Then save whatever I don't use.
At this point the potatoes are done- take them out of the oven and mix them in with the cashew sauce and veg!
And dinner is ready!
